Preparation

Cut the chicken into chunks no larger than 3 cm to make more uniform cooking, alternatively, you can make thinner slices but you will lose the pleasure of biting. ;)
Prepare a pan with the sake and mirin, and place on stove over low heat for 2 / 3 minutes to evaporate the bulk of alcohol. Then add the soy sauce and lightly salted everything.
Cut the onion (white or red depending on what you prefer) into slices and fry in the pan until it becomes transparent, add the water to prevent burning and everything is refilled whenever need be.

Girate un paio di volte il contenuto della padella per amalgamare gli ingredienti e mettete il coperchio per un paio di minuti al fine di terminare la cottura.
(il fornello sporco è dovuto al fatto che QUALCUNO ha messo il coperchio al pentolino del brodo che QUALCUN ALTRO ha riempito troppo)
